Not that I've played many fantasy board games, but by far the best I've come across is Talisman.
Each time you play, you pick a different character at random, (warrior, minstrel, elf etc), which gives the game great replayability.
While playing you build up your character by fighting enemies, picking up magical items and so on and the winner is the one that kills off the other characters at the end.
It takes a good few hours to play through to the end, but it's great fun
