Well, you have been fine with undead. It is a construct, a golem who took you down.
Undead, cosntruct, abheration, all monster can be fun if palyed porperly. The power of Ravenloft, is not killing undead but figuring out the situation. But I will not lie. There are a few undead there.

First choice would be Number 1, then I'm thinking number 2, although I do agree with Puff - fighting undead is cool, but not THAT much.

Ravenloft is undead central and undead related (e.g. werewolf, hag) central. It also bring in heavy focus on the cleric in the group. However, it is a non-issue as Ravenloft has been eliminated.
